WHY A medley of texture, the sweet (well, savoury) combination of cracking, pork and that pillowy-soft bun. Mamma mia!
I’m not a fan of pork products in general and too much bread scares me off, so why was I eating at Porchetta & Co for the third time in as many weeks? This sandwich is unlike any other.
Individually, each component of the sandwich looks like it will overwhelm you — the giant kaiser-esque bun, so much pork with so much fat on top of it. Fat! But all together: Heaven.
To think the bun a kaiser is an insult, its soft sourdough soaking up the tomato sauce and providing a cushion to that delectable crackling (fat!). The process is involved, and owner Nick auf der Mauer provides a clever diagram on the restaurant’s website, but long story short: marinated pork shoulder is wrapped in prosciutto, then wrapped in cured pork belly then slow cooked. Long story shorter? Yum.
Auf der Mauer just celebrated the restaurant’s first birthday on Dec. 20 by selling more than 600 sandwiches for $1. All for the love of pork.
